When it comes to Chipotle’s guacamole, my numero uno choice for luscious, creamy, satisfying, filling, and gloriously “a healthy fat.”
Luckily, making it at home couldn’t be easier, and there isn’t an upcharge in sight.
Whenever you’ve got ripe avocados on hand, whether it’s day or night, it’s guacamole time!
What does Chipotle put in their guacamole?
Besides magic? It’s really quite simple.
- Hass avocados:How great is it that 95% of the avocados grown in California are Hass!
- Citrus juice:Chipotle uses a combination of lemon and lime juices in their recipes.
- Jalapeño peppers:If you want to make spicy guacamole, look for Serrano peppers, which are generally similar in size, shape, and color to jalapeño peppers but thinner and possibly a bit smaller.

Selecting and storing avocados:
There are two schools of thought:
1.When selecting avocados, choose ones that are firm but yield slightly when gently squeezed in the palm of your hand; avoid those that feel too soft or have soft dark spots on the skin, and check for bright green color under the stem when flicked off but handle them gently.
2.Purchase rock-hard avocados and ripen them at home, exercising patience to avoid the risk of buying overripe ones.
How to ripen avocados:
To expedite the ripening of avocados, place them in a paper bag with an apple, banana, or kiwi fruit, as these fruits release ethylene, a plant hormone that accelerates the ripening process when left at room temperature.
Once the avocados have reached your desired level of ripeness, keep them whole in the refrigerator until you’re prepared to make your guacamole.
How does Chipotle make their guacamole?
Thanks to input from friends and former Chipotle associates, this is precisely the method they follow.
1.Halve a couple of avocados, remove the pit, scoop out the flesh, mix it with lemon and lime juice, add salt, and mash together.
2.Next, stir in finely chopped cilantro, red onion, jalapeño peppers, and additional salt to taste, then serve with tortilla chips for a delicious snack.

How to cut an avocado:
Avoid cutting an avocado in half while holding it in your hand, as they can be slippery and cautiousness is needed; otherwise, the knife blade might slip and cause injury.
1.Select your avocado and place it on a cutting board.
2.Slice into the avocado with a chef’s knife lengthwise around the pit until the blade hits the seed, then carefully rotate the avocado with one hand while holding the knife steady with the other.
3.Gently rotate the avocado halves in your hands, twisting if needed, to separate them and reveal the pit.
Help! Why does cilantro taste like soap?
It’s not cilantro…it’s you. Sort of!
Some individuals (around 4-14% of the population) have the ability to taste a natural chemical compound in cilantro that others perceive as soapy, metallic, or simply unpleasant. If you happen to fall into that 4-14%, the best course of action is to avoid cilantro in recipes, but parsley can serve as a suitable substitute.
How long is guacamole good for in the fridge?
Guacamole can be refrigerated for 3-4 days, but you may need to contend with discoloration due to oxidation.
The best ways to ward off the browning of guacamole is:
1.After squeezing extra citrus juice over the top of the guacamole, cover the bowl with plastic wrap, pressing it directly onto the surface of the guacamole.
As a last resort, simply scoop off the brown layer of guacamole to reveal the vibrant green deliciousness underneath!

Ingredients
- 2 large avocados halved and pitted
- 1 teaspoon fresh lemon juice
- 1 teaspoon fresh lime juice
- 1/4 cup red onion finely chopped
- 1/2 jalapeño pepper stemmed, seeded, and finely chopped (see notes)
- 2 tablespoons cilantro leaves finely chopped
- salt
- tortilla chips for serving
Instructions
- In a medium bowl, combine avocados, lemon juice, and lime juice, mash until smooth, then stir in onion, cilantro, and jalapeños, season to taste with salt (½ teaspoon), and serve with chips.
- To refrigerate, place in a bowl and press plastic wrap directly on top of the entire surface of the guacamole to ensure no part is exposed to air.
Notes
- For extra heat, include the seeds from the jalapeño as Chipotle does.
