Since that first, flavor-exploding bite last year, I’ve been on a mission to recreate it perfectly, and today I’m thrilled to share my perfected cowboy caviar recipe with you!

Easy as can be, this cowboy caviar just requires chopping veggies and tossing them together for a delicious dip.
The key to the ultimate cowboy caviar, in my humble opinion, is super-fine dicing (think bean-sized!) for all the chopped veggies and keeping your tomato and avocado in petite pieces – a trusty chopper, including for the tomatoes, makes this a breeze!

This fresh, simple Cowboy Caviar dip throws together in under 15 minutes, making it a perfect side for any picnic, potluck, or party, and a great way to use up your summer produce!

Ingredients
- 3 Roma tomatoes seeds removed, diced
- 2 ripe avocados diced
- ⅓ cup red onion diced
- 15 oz black beans rinsed and drained
- To the salad goes 15 ounces of rinsed and drained black-eyed peas, 1 ½ cups of thawed frozen sweet corn (though I usually toss it in frozen unless we’re eating right away – it thaws quickly), and a diced bell pepper (color doesn’t matter, I used half green and half red).
- 1 jalapeno pepper seeds removed, diced into very small pieces
- ⅓ cup Cilantro finely chopped
DRESSING
- ⅓ cup olive oil
- 2 tablespoons lime juice fresh preferred
- 2 tablespoons red wine vinegar
- 1 teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon pepper
- ¼ teaspoon garlic powder
- Tortilla chips for serving
Instructions
- In a large bowl, toss together tomatoes, avocado, onion, black beans, black-eyed peas, corn, pepper, jalapeno, and cilantro for a well-combined mixture.
- Whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder in a separate bowl for a flavorful dressing.
- Pour the dressing over the other ingredients and toss thoroughly; refrigerate until serving, giving it another good toss before enjoying.
